Provolone. Cheddar. Swiss. Perhaps the most well know type of dairy, cheese plays a substantial roll in both Italian and American cuisine, adding flavor and delight to every dish. But there is not just one type of cheese- nor equality amongst all preferred cheeses.

Recently, mozzarella has taken the stage as the most popular cheese in America, each citizen ingesting over 30 pounds of it per year. This soft, white specimen of dairy is widely used on salads, made into sticks, and melts on meats to create snacks and meals. Closely following the race cheddar, the bright orange and sharp-flavored cheese primarily used on sandwiches.

So where does that leave the rest of them? There are over 50 different types of cheese, varying in flavor, color, and texture throughout the states. But one type will definitely stand out to people alone, due to the simple fact that it is covered in mold- Blu Cheese.

Most preferred as a dipping sauce, blu cheese is sour and sharp attributed to the blue-gray strain of Penicillium that runs through its veins, making most people turn their heads away at the sight- and smell. THIS IS WRONG!!!

BLUE CHEESE DESERVES TO HAVE THE RECOGNITION AND ADMIRATION THAT ALL OTHER POPULAR CHEESES DO! JUST BECAUSE IT CONTAINS MOLD DOES NOT MEAN THAT PEOPLE HAVE TO ACT DISGUSTED WHEN THEY SEE IT ! IT TASTES VERY GOOD AND IS USED BY MANY CULTURES! STOP THE DISCREAMINATION AGAINST CHEESE BEFORE ITS TOO LATE!
